Brian Grazer. Hands down. I mean the IMDB profile alone says it all. American Gangster, A Beautiful Mind, Arrested Development, Liar Liar, Apollo 13, Splash, Parenthood, and my personal cult favorite; Sports Night. His ability to cross between film and TV is mind-blowing. He also seems to produce really entertaining projects while also making them commercially viable as well. There is a lot to be said for being able to churn out consistent blockbuster movies and hit TV shows year after year without any drop off. I'd just want to pick his brain and see what it takes to carve out such a successful and individual niche in an industry that usually swallows you up whole and spits you out with ease.
